Nadda Egg Insight Salad Wrap
1 10.5 oz. pkg. Silken Tofu
4 chopped green onions
1/2 organic red bell pepper, finely chopped
2 stalks celery, finely chopped
1/2 cup shredded broccoli stalk
1 diced organic roma tomato
2 tbsp. Nutritional yeast
2tbsp. Cider vinegar
2 tbsp. Organic lemon juice
2 tbsp. Dijon mustard
1 tbsp dry dill leaves
1 tsp. Tumeric
1 tsp. Onion powder
1 tsp. Garlic powder
Whole Wheat, low fat tortillas
Combine tofu, vegetables, and seasonings in medium bowl. Use a fork or potato masher to thoroughly mix. Serve in tortillas or atop a bed of fresh, chopped baby greens.
